How to Cook Torrisi Turkey

Ingredients:
- 1 (5-6 pound) bone-in, skin-on turkey breast
- 2 quarts water
- 1 cup kosher salt
- 1/2 cup sugar
- 1/4 cup black peppercorns
- 1/4 cup bay leaves
- 1/4 cup juniper berries
- 1/4 cup coriander seeds
- 1/4 cup fennel seeds
- 1/4 cup mustard seeds
- 1/4 cup allspice berries
- 1/4 cup cloves
- 1/4 cup cinnamon sticks
- 1/2 cup honey
- 1 head of garlic, roasted and peeled
- 1/4 cup fresh thyme leaves
Instructions:
- To make the brine, combine the water, salt, sugar, peppercorns, bay leaves, juniper berries, coriander seeds, fennel seeds, mustard seeds, allspice berries, cloves, and cinnamon sticks in a large pot. Bring to a boil, then reduce heat to low and simmer for 5 minutes. Remove from heat and let cool completely.
- Place the turkey breast in a large brining bag or container. Pour the cooled brine over the turkey, making sure that it is completely submerged. Seal the bag or container and refrigerate for at least 12 hours, or up to 24 hours.
- Preheat oven to 250 degrees F (120 degrees C).
- Remove the turkey breast from the brine and rinse it thoroughly with cold water. Pat dry with paper towels.
- Place the turkey breast on a wire rack set over a roasting pan. Add enough water to the pan to reach just below the rack.
- Roast the turkey breast in the preheated oven for 2-3 hours, or until the internal temperature reaches 135 degrees F.
- Near the end of cooking time, fill a large bowl halfway with ice water.
- Without removing the thermometer or wrapping, submerge the turkey in the ice bath for 5 minutes.
- Remove the turkey from the ice bath and remove the foil and plastic wrap. Pat dry with paper towels.
- In a small bowl, whisk together the honey, roasted garlic, and thyme leaves.
- Brush the turkey breast with the glaze on all sides.
- Increase the oven temperature to 450 degrees F (230 degrees C).
- Roast the turkey breast for an additional 15-20 minutes, or until the glaze is golden brown and the turkey is cooked through.
- Let the turkey rest for 10 minutes before slicing and serving.
Tips:
- For a more flavorful turkey, you can add herbs and spices to the brine, such as rosemary, sage, or parsley.
- If you don't have a brining bag, you can place the turkey breast in a large pot or container. Just be sure to weigh it down with a plate or something else heavy so that it stays submerged in the brine.
- To check if the turkey is cooked through, insert a meat thermometer into the thickest part of the breast. The turkey is done when the internal temperature reaches 165 degrees F (74 degrees C).
- If the turkey breast is browning too quickly, you can tent it with foil.
- Let the turkey rest for at least 10 minutes before slicing and serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful turkey.
